How to Make the World’s Best Cheesecake as Unbiasedly Voted by my Husband

If you haven’t already heard, Cheesecake is Kev’s favourite dessert! So it is only natural that we show you how to make the World’s Best Cheesecake as unbiasedly voted by my husband!

Not just any Cheesecake but the one his Mum used to make and my Mum used to make, so it has been in both families for many, many years! Therefore, naturally, I have been making it for quite a number of years as well, 32 years or more but who’s counting!

How to make the World’s Best Cheesecake without baking

This no bake Cheesecake is sweet and rich in taste. It is also very easy to make! You just need to plan ahead as it is best made in the morning so it is set by the evening. That’s what I have to do anyway otherwise it’ll go missing when I’m not looking!!

As I never know when Kev is going to put in a request for his favourite Cheesecake, I always try to have the ingredients on hand. The one thing that I know for certain, I definitely need to have them available for special occasions as it is expected for a Cheesecake to be made for Birthdays, Father’s Day and Christmas, at the very minimum!

Here’s how to make a Cheesecake from 4 ingredients which is super yummy.

The 4 ingredients

Cheesecake Filling:

1 x Can of Condensed Milk

1 x Lemon (you may need an additional lemon to thicken)

Biscuit Base:

1 x Packet of Chocolate Ripple or Ginger Nut Biscuits. Kev loves the chocolate ripple base!!

½ cup of melted butter or margarine

If you have these 4 ingredients, you can easily whip a delicious Cheesecake anytime, you can even make it while traveling, I certainly have!

How to make the World’s Best Cheesecake from home

To make a Cheesecake from just 4 ingredients is super easy.

Ultimate Cheesecake Recipe

Our Method

Biscuit Base:

Crush the packet of biscuits with a rolling pin or place in a blender until coarse crumbs form. I personally use the rolling pin method as I like to gauge the coarseness – simply place biscuits in a ziplock bag and crush with the rolling pin.

Melt the butter or margarine in a microwave for 20-30 seconds or in a small saucepan over low heat on the stove.

Mix melted butter and crushed biscuit crumbs together in a bowl. Then firmly press into a pie dish and place in the refrigerator for 30 – 40 minutes to harden.

Cheesecake Filling:

All you do is pour the Condensed Milk into a mixing bowl and beat with electric beaters. Gradually add the lemon juice and continue beating until the mixture is thick.

Spread the cheesecake filling over the biscuit base and return to the refrigerator to set for 3-4 hours, but I like to leave it set for at least 6-8 hours.

Philadelphia Cheesecake Recipe

Added Extra:

You can add 250g Philadelphia Cream Cheese to the cheesecake mixture for an even thicker, creamier taste. Simply beat cream cheese in with condensed milk as above. Then gradually add the lemon juice and continue beating until the mixture is of a thick consistency.

Cost to Make the World’s Best Cheesecake

I have calculated the cost to make up this super easy Cheesecake is approximately $5.90.

This costing is based on using the Woolworths Brand Condensed Milk as it is literally half the price of the Nestle brand and I can’t tell that there is any difference in the taste. Also working on 85 cents for a lemon. You may be able to pick them up cheaper than that and also find Chocolate Ripple biscuits on special for $2 which may bring the price down to around $4.50.

Added Cost of Philadelphia Cream Cheese: $4.70 so brings the cost up over $10.00. I make it with and without the Philly Cheese.

Alternate Cheesecake Flavours

Get creative and make up your own new flavours of home-made chocolate!

Zesty Lemon

Try adding the zest of the lemon that you have used for the cheesecake filling! Simply add the lemon zest in with the cheesecake filling!

Strawberry

Another idea is to add in fresh strawberries to create a Strawberry Cheesecake. Fold in the finely chopped or crushed strawberries to the cheesecake mixture after it has been thickened.

Zesty Orange

For a hint of orange flavour, add some orange rind to the cheesecake mix.

Extra Creamy

Mix in some whipped cream for a real creamy cheesecake! Just fold in some whipped cream to the mixture after the thickening process.

Chocolate

Also try adding a tablespoon of cocoa and turn your cheesecake into a ‘chocolatey’ cheesecake!

Blueberry

Make it into a Blueberry Cheesecake by adding some fresh blueberries into the mixture after the thickening process.

Tropical Pineapple

Plus, you can create a tropical cheesecake by adding pineapple. Be sure to drain all the liquid from the pineapple before adding to the cheesecake mixture after it has been blended to a thick consistency otherwise it will need more thickening. The different flavour possibilities are endless!

Added Toppers

  • Sprinkle lemon zest on top of your cheesecake for extra tang!
  • Decorate your cheesecake with strawberry halves or segments just before serving!
  • Add a bit of citrus with orange zest or thin orange sliced segments or both!
  • Dust with grated chocolate or place chocolate drops on top for a yummy added extra!
  • Place well-drained pieces of pineapple for a tropical delight! Best added just before serving.

Cheesecake Serving Suggestions

Besides making this recipe up in full as one whole Cheesecake that can be sliced into portion, try making up individual Cheesecakes. There’s no slicing required and they are easy to serve.

I often make up Mini Cheesecakes rather than one whole one. Simply use a silicon muffin tray and press the biscuit crumbs into the base of each muffin mould. Add the cheesecake mixture to create lots of individual serves.

One of our Favourite most used items we travel with

Check out this video we took of how the torch performs

When travelling there’s many times when you’re outside in the dark. Walking back from late afternoon Happy Hour that goes late, a middle of the night walk to the amenities, catching a feed of fish or fixing a perennial problem in your vehicle. Our favourite most used travel item is our torch.

These are just some of the times when you find yourself reaching for a torch.

You really don’t want to be in the Australian outback walking around at night in the dark. Matt and I were walking back to camp late one night in Rollingstone when we came across a venomous snake just in front of us on the footpath.

Very lucky we had our torch!!

It’s why one of my favourite most used travel items I’ve bought has to be this excellent 1000 Lumen torch.

It is the Tech Light 1000 Lumen Rechargeable LED Torch from Jaycar Electronics.

It’s made of Heavy Duty Aircraft Grade Aluminium for the very toughest of conditions making it perfect for travelling with all the harsh conditions it needs to absorb while bouncing around in our Caravans and 4wd’s when we are on the move.

  1. To plug your RV with standard 15amp in to standard residential 10amp power source you will need a converter. We love our waterproof Ampfibian and after over 4 years it’s still perfect.
  2. Most people carry a Generator for back up power. 4wd Supacentre has a good low cost and popular generator while the Yamaha 2000w is a robust yet quiet excellent performer.
  3. A 20m 15amp Power Lead will ensure you reach your power source in Caravan Parks and Campgrounds.
  4. You will want a good blue Drinking Water Hose. Your typical green garden hose is not suitable for drinking from.
  5. A 4 way tap handle will help you find water whenever you need it

We found the torch was perfect when we were looking for Wombats. Being nocturnal these cuddly creatures come out in the evening and once we found one we could change the setting from high to low light so we weren’t affecting the Wombats.

The torch comes with 3 different settings – High, Low and it also comes with a Strobe light.

An adjustable head also allows you to focus the beam or widen the area you want to see.

Powering our Favourite Most Used Travel Item

There’s no continual cost for batteries, once the power runs out simply plug it back in to re-charge. Once it is fully charged the indicator light will turn green and you’re good to go again. When fully charged it will provide 2 hours of continuous use.

It comes in a great little sturdy box with the charger, 3.7v Li-ion battery and a wrist strap. We still have our box it came in, it’s a great way to store it and keep it in mint condition.

How to make Delicious Ice Cream from just 4 Ingredients

Here’s how to make delicious Ice cream from just 4 ingredients! It is a sensational dessert! Plus, it’s healthier and so easy to make.

My sister used to make a super yummy chocolate ice cream so I always knew there were ways to make your own great home-made ice cream.

Ice cream straight from the supermarket can be so good however there’s often lots of sugar, fats, additives and colourings that aren’t ideal for our health.

We went in search of a simple recipe that gave us delicious ice cream that was healthy, tasty and easy to make. With a bit of taste sampling,we discovered this amazing way to create your own mouth-watering Chocolate Ice Cream.

Actually, let’s double down here and we’ll show you how to make it a Double Chocolate Ice Cream with just 4 ingredients.

How do you make Ice Cream at home?

These four ingredients I carry in our pantry on a regular basis and you probably do too.

Ice Cream 4 Ingredients – Option 2

The four Ice Cream ingredients are:

Option 1

1 Can of Full Fat Coconut Milk (but I used Coconut Cream)

¼ cup Cocoa Powder

¼ cup Honey (or you can use Maple Syrup)

½ cup of Choc Bits

Option 2

1 Can of Full Fat Coconut Milk (but I used Coconut Cream)

¼ cup Cocoa Powder

¼ cup Honey (or you can use Maple Syrup)

1 teaspoon Vanilla Essence

As I am usually always stocked up with these 4 items for either option, I now know I can easily whip up a supply of chocolate ice cream anytime, anywhere!

Making delicious ice cream from 4 ingredients

How to make Ice Cream from 4 Ingredients at Home Step by Step?

To make ice cream from 4 ingredients is super easy.

Method:

Option 1: All you do is place each of the ingredients, except for the choc bits, in a blender and mix until smooth and creamy.

Then just pour the creamy mixture into a freezer-safe container. Sprinkle in the choc bits and pop it in the freezer until it becomes firm. It usually takes between 4 – 6 hours but it depends on how hard you like your ice cream. If it is too firm, just take it out of the freezer 5 minutes before serving to allow it to soften a little so it makes it easier to scoop.

Option 2: All you do is place each of the ingredients in a blender and mix until smooth and creamy.

Then just pour the creamy mixture into a freezer-safe container. Pop it in the freezer until it becomes firm. It usually takes between 4 – 6 hours but it depends on how hard you like your ice cream. If it is too firm, just take it out of the freezer 5 minutes before serving to allow it to soften a little which will make it easier to scoop.

The recipe states it makes 4 serves however I managed to stretch out the mixture to roughly half-fill 6 of the 200ml size ice cream cups. It is just a nice size single serve! Therefore 1 x 400ml can of Coconut Cream makes roughly 600ml.

If you have an ice cream maker you can speed up the process dramatically and your ice cream will be ready in as little as 20 minutes!

We like the new Cuisineart Ice Cream Maker for its 2L capacity plus the stainless steel design. The one we used today was the Ninja Blender which worked perfectly.

I used some great little Ice Cream cups with lids to make individual serves. For larger amounts I keep them in these great 1.4L BPA Free Plastic Ice Cream Tubs which come in 4 different colours. They are suitable for the dishwasher if you’re making the Ice Cream at home.

We found this ice cream freezes quite solid and a good durable aluminium Ice Cream Scoop makes it much easier.

How to Make Delicious Ice cream from 4 ingredients - it's so easy!

Calorie Count

The number of Calories per serving is approximately 290.

It contains

Fat: 23g

Carbohydrates: 23g

Fibre: 1g and

Protein: 3g.

Note – You just need to factor in the extra calories per serve if you are doubling down by including the chocolate bits from Option 1. Also there will be additional calories if you are creating any new flavours.

Cost to Make Ice Cream from 4 Ingredients

I have calculated the cost to make a tub of this easy, healthy, delicious Chocolate Coconut Ice cream is approximately $3.15. Usually I buy the Coconut Cream from our local grocery store for around $1 per can. You can pay between $1.50 – $3.50 for premium/organic quality Coconut Milk. Plus, I estimate the cost of the small portions of cocoa, honey and vanilla would total approx. $2.15.

The cost for Double Chocolate Coconut Ice cream, still using only 4 ingredients, as I swapped out the Vanilla Extract with the Chocolate Melt bits is $3.60, it only adds another 45 cents.

Added Extras:

Double Down Chocolate – try adding some dark chocolate melt bits for an added surprise at the end of your serving as the chocolate melts drop to the bottom of the mix/cup! You can still stick to the 4 ingredients by taking out the vanilla and adding the chocolate melt bits. I have made the Chocolate Coconut Ice cream recipe with the chocolate melt bits but without the vanilla extract and it hasn’t affected the taste at all! You have the choice of Option 1 or 2.

Ice Cream Toppers:

As a topper, we add a fresh strawberry or strawberry segments with some cream or white chocolate drops to our delicious home-made chocolate ice cream treat. Also, we have been known to add a small spoonful of supermarket bought vanilla ice cream occasionally. But that’s just us doubling up on ice cream as we both love it!

How to Make Delicious Ice Cream from 4 Ingredients

Alternate Flavour Suggestions:

Get creative and make up your own new flavours!

  • Try adding banana to the basic mix for some delicious Choc-Banana Coconut Milk Ice Cream! By blending in a banana, this should add to the quantity of the mixture making more serves.
  • Another idea is to add in macadamia nuts. Ooh my mouth is watering as I love macadamia ice cream.
  • Also you can mix in some mini m&m’s or any of your favourite lollies. You can create your own home-made version of Cold Rock.

The different flavour ideas are endless!

It doesn’t get much easier than that and you don’t need to own an ice cream maker either. Now you know how to make ice cream from 4 ingredients, you’ll be able to whip up a tub of your own in a flash at home as well. Plus, you can even make your own ice cream while you are traveling

How to get there?

Follow Park Rd in Noosa along the ocean front until you reach the Noosa National Park Carpark. It gets very busy, you may need to be patient.

What to take?

It can be very hot in summer, take a wide brimmed hat, plenty of sunscreen, insect repellant and enough water. Wear good comfortable walking shoes.

In winter ensure you have a jacket as it can get very cold at the Headland.

Don’t forget your Phone and a Camera.

Where to stay?

The Eumundi Markets began in 1979 as a way for local craftspeople to sell some wares in their local community. Over the years the markets grew extraordinarily and today is one of Queensland’s largest and most popular market.

From Noosa to Eumundi Markets it is approximately a 21 km drive and will take you around 25-30 minutes.

There’s great shopping for clothing, shoes and local handmade craft and there is plenty of delicious food and places to eat.

There are 600 stalls and the markets attract 1.6 million visitors each year.

Buderim Forest Park, Sunshine Coast

The Buderim Forest Park is a hidden gem on a secluded 45 hectare of rainforest with waterfalls, streams and walking trails.

It is home to many animals including Paddymelons, Gliders and goannas while Black Cockatoos and Lorikeets are just some of the birds that call this Nature Reserve home.

This secret valley is also home to the beautiful Buderim Forest Park Waterfalls, otherwise known as Serenity Falls. You can view the falls from directly underneath or the bridge makes a perfect vantage spot.

As you follow the stream down from the waterfalls you will find small rock pools perfect to cool off on a hot Queensland summer day.

How long is the walk to Buderim Falls?

There are 2 entries to Buderim Park Forest and we visited from Quorn Close. From there it was a short 600m walk to the Falls.

Are dogs allowed at Buderim Falls?

Buderim Park Forest is a Nature Reserve and therefore dogs and pets are not allowed.

What to take with you!!

Wear good comfortable shoes for some rock walking, drinking water, your phone and a camera.

To get a genuine understanding of this event, I recommend doing the climb yourself in the weeks or months prior to the event. I’ve climbed a few mountains and whilst I’m a little older and less fit now, Mount Cooroora was without doubt my most challenging mountain climb.

By doing this climb yourself you will really appreciate the absurd fitness and skills of these athletes who race from the town centre uphill for over 1km just to get to the base of the mountain.

You will want some level of fitness to do this mountain. There are stages where it can get very challenging with very steep upright climbing involved.

I’m embarrassed to say it took me around 50 minutes to climb to the top and around 25 minutes to get back down. And that’s just from the base, without the run to the mountain first and back. Jason who I started the climb with was much faster and was up within around 25 minutes and around 15 minutes to get back down.

King of the Mountain Race

The Race Record was set in 2009 at 22 mins 43 seconds. That’s running to the mountain, climbing it up, back down and then running back to the start. It does my head in to think it’s even possible to do that.

The race is 4.2kms and the Mountain is 439m high. In comparison, nearby Mount Coolum which I have climbed twice is just 207m high.

The Pomona King of the Mountain race is held annually in July since 1979. Due to the events of 2020 the Race has had to be cancelled for the first time since it began.

The whole day is a wonderful event with a great carnival atmosphere. There’s market stalls, food, beverages and events to entertain. It’s really worth spending the day at the Pomona King of the Mountain race and marvel at the incredible fitness of all the men and women involved.

Where is Pomona?

From Noosa to Pomona, a small hinterland town on the Sunshine Coast, it is just 30kms. Pomona is approximately 135kms north of Brisbane and is a short 10 minute drive from the Bruce Highway.

Montville and Maleny

For the best things to do in the Sunshine Coast Hinterland head to Montville and Maleny.

What is there to do in Montville and Maleny?

When you visit you’ll find the Montville Shops which are really worth the time to explore and see the range of unique items for sale. My favourite is the Clock Shop, a huge array of modern and traditional time pieces.

Close to Montville is the Kondalilla Falls. Here you can take a beautiful rainforest walk through to Waterfalls and Swimming holes and enjoy the stunning views along the way.

How far is Montville from Maleny?

From Montville it’s just a short 15km drive to Maleny that will only take you about 15 minutes.

How far is Montville from Brisbane?

Brisbane is approximately 100kms north of Brisbane. It’s a very popular day trip for those from Australia’s third largest city and bike riders love the mountain ride up to the region.

Along the way from Montville to Maleny is a number of places to stop, one of which is the Maleny Lookout. There are a number of lookouts in the area and Gerrards Lookout provides extensive views over the valley back towards the Sunshine Coast beaches.

Also along the drive you will find Maleny Cheese and Maleny Dairy, both worth stopping in to check the tantalising tastes of cheese, yoghurts and other wonderful products. Maleny Yoghurt is my favourite brand, so creamy and full of flavour.

Once you make it to town there’s some great Cafes and Maleny Ice Cream at the fabulous Maleny Food Co is one of our favourite in all of Australia.

The Sunshine Coast Hinterland is a beautiful region to visit. You won’t be disappointed.

Sea Life Aquarium Sunshine Coast, formerly Underwater World is located at Mooloolaba near the wharf. It’s a Marine wonderland with an amazing array of sea life and beautiful creatures.

With over 3 levels of fun and entertainment there are animal encounters at every turn.

The underwater shark tunnel is an ocean adventure you have to experience. It is 80m long tunnel with views of Coral Reef and Caves and an marinelife including Grey Nurse Sharks, Stingrays, Eels, Reef Sharks and an assorted species of fish.

Each day there are Seal demonstrations and Sea Life Aquarium Sunshine Coast do a very important job as a rehabilitation centre for Turtles and Seals.

How long does it take to go through Sea Life Sunshine Coast Aquarium?

There is a lot to see over 3 levels and shows. Allow yourself at least 90 minutes but it’s easy to spend a few hours enjoying the Seals and Sharks and finding Nemo. The children will also have a great time with interactive displays and opportunities to meet the Seals and discover an Underwater World that they will certainly enjoy.

How to get there?

Sea Life Sunshine Coast Aquarium is on the Mooloolaba Spit next to the Mooloolaba Wharf. There is ample nearby parking with 3 or 4 hour time limits.

Head to Mooloolaba Spit along Parkyn Parade until you see Sea Life Aquarium on your right.

For accommodation, Camping is available near Harrys Hut, an old loggers Timber cottage built in 1957. Harry was a pharmacist from Cooroy who would camp nearby and bought the hut once logging discontinued. It is no longer used but is protected and maintained by the Environmental Protection Agency.

Access in by vehicle is best by 4wd as the track is rough with washouts and potholes in parts. It is not suitable for Caravans or Motorhomes.

Fishing in the Noosa Everglades produces Bass and Mangrove Jack from it’s Brackish to Fresh Tea Tree waters.

A great way to see the Noosa Everglades is by Kayak or through a scenic cruise.

Our tips

Take sunscreen, insect spray and hat with you. Take something to eat and water with you, there is no drinking water available. The track would be muddy and treacherous in the wet, best to go in good weather.

Ask your tour guide about the ship wreck of the Cherry Venture which ran aground along Teewah Beach in 1973. The rusted remains were removed in 2007 however since the heavy seas from Cyclone Oswald in 2013 the remains of the hull can be seen within the sand.

You are going to want to make sure your batteries are fully charged in your cameras for this trip. The photo opportunities are endless.
